I’m putting together a recipe contest to promote my book The Cow Loves Cookies. I will announce the contest in about a week.
What prompted this contest? Well, I was reading a review (very positive I might add) of Cow Love Cookies and one of the only cons the reviewer mentioned is that the book would encourage kids to want to eat cookies. BUT this assumes all cookies are bad or “junk”. I maintain that there are delicious but healthy cookie recipes out there.
So I will be coming up with a nutritious, delicious cookie recipe and it will probably incorporate foods that cows really DO enjoy, like oats, carrots or apples.
Put on your thinking cap (or your chef’s cap) and get to work brainstorming up the perfect cookie for cow to crunch! Winners will receive a batch of signed books and their recipe will be featured (fully credited, of course) on my website in “Features for Teachers”. Low fat and gluten free cookie recipe!
Many people have wheat allergies and cows love corn!
Popcorn cookie crunch:
pop up you favorite flavored popcorn, sweet and salty or plain!
Set stove to low heat, empty entire jar of mashmallow cream into pan and stir. Once warm and smooth and desired amount of popcorn, stir. Spread out on wax paper to cool, use sprinkes and cookie cutter shapes to make it you way!!
Full of Good Stuff Oatmeal Cookies
1 cup wheat flour
1 cup unbleached all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup unsalted butter, softened (2 sticks)
1/2 cup granulated sugar, plus 1 tablespoon
1 cup light brown sugar, firmly packed
2 large eggs
1 teaspoon vanilla extract
2 cups “old-fashioned” or rolled oats
1 cup finely shredded carrot, lightly packed (2-3 med/lg carrots)
1 1/2 cups dried cherries, or dried apricots (coarsely chopped)
1 cup pecan pieces, coarsely chopped
Preheat the oven to 350 degrees F.
1. In a medium bowl stir together flours, baking powder and salt, set aside.
2. In a mixer bowl combine butter, brown sugar and 1/2 cup granulated sugar and until well-mixed.
3. Add eggs one at a time until well-incorporated. Add vanilla and mix.
4. At a slower speed add flour mixture and oatmeal.
5. In a small bowl mix shredded carrot and 1 tablespoon of granulated sugar. Add to cookie dough mixture.
6. Add in dried fruit and pecans and mix until well-combined.
7. Drop by spoonfuls onto a cookie sheet covered with parchment paper. Leave about 2 inches between each of the cookies. Bake for 12-15 minutes or until they become firm.
They just read this at our barnes and noble story time…my kids loved it!
Apples, carrotts and raisins cookies
Ingredients:
1/2 cup butter, softened
1 cup brown sugar
2 eggs
1 cup shredded apples
3/4 cup shredded carrots
1 cup raisins
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons ground cinnamon
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Line tray with parchment paper.
2.Mix together the butter and brown sugar until smooth. Beat in the eggs one at a time, stir in the apples, carrots and raisins. Combine the flour, baking powder, baking soda, salt and cinnamon; stir into the fruit mixture.
(Optional: you can add any pecans or walnuts to the mixture if you have no issues with allergies)
3.Drop by rounded spoonfuls onto the prepared cookie sheets.
4.Bake for 15 to 20 minutes in the preheated oven, until bottoms begin to brown and cookies are set. Allow cookies to cool for a few minutes on the cookie sheets before removing to cool completely.
